When you drink coffee, do you really know what you are drinking?

Although Colombia has one of the best coffees in the world, the highest quality beans are usually reserved for export, while here we mostly consume what is called "pasilla".

After harvesting, pulping, washing and drying, the coffee is in the "parchment" state. It is at this moment when defective beans are selected and the "pasilla" comes out, characterized by its black color, excessive dryness and bad taste. These beans can even be affected by insects or fungi.

Often, we do not realize it, since this coffee is mixed with some better quality beans before going through the roasting and grinding process.
