What is a specialty coffee?

For many people, coffee is synonymous with a bitter and acidic beverage, often softened with sugar and milk. However, this perception changes completely when exploring better quality coffees, especially specialty coffees.

Specialty coffee is recognized worldwide thanks to the SCA (Specialty Coffee Association) score, which classifies coffees on a scale of 0 to 100. Only those that obtain more than 80 points are considered specialty coffees, differentiating them from commercial coffees.

This rating is based on aspects such as aroma, which should be pleasant and distinctive in both the dried bean and the infusion. Flavor is also evaluated, looking for unique notes that can range from sweet to more complex profiles.

Balanced acidity is another key factor, as it brings vivacity to the coffee, while characteristics such as body, balance and uniformity add up to determine the final score.
