This gives the coffee a full and complex flavor, a pleasant acidity, more aromatic and sweeter compared to green beans. Undoubtedly this selection elevates the quality.<\/p>\n\n<p>In contrast, in vast plantations in countries like Brazil, technification dominates. Powerful machines harvest all the fruit from the branches, which speeds up the process and lowers the cost, but still do not distinguish the maturity of the bean.
